  • For chicken fricassee
  • Carrot
  • green bell pepper
  • yellow bell pepper
  • red bell peppers
  • Parsley
  • celery
  • spring onions
  • thyme
  • garlic, ginger
  • cooking cream
  • white wine
  • mushroom
  • scotch bonnet peppers
  • white or black pepper
  • chicken thigh or breast

How to make Chicken fricassee

  1. For fricassee sauce

    1.Wash all ingredients and utensils.

    2. Clean chicken, season and marinate properly with ginger, garlic, chicken seasoning powder, salt and set aside.

    3. Place cooking woke or pan on heat, add margarine or butter.

    4. Dust chicken with flour and fry till golden brown.

    5. In another pan, put some butter and fry the vegetables - onion, ginger & garlic, parsley, carrot, bell peppers, spring onions.

    6. After about 2 minutes add in a little dark soy sauce, salt and seasoning powder to taste.

    7. Add mushroom(optional), a little white wine and fried chicken.

    8. Pour in your cooking cream, stir and leave to simmer for a minute or two and your fricassee sauce is ready.

    9. Best served with braised rice.

  2. For braised rice.

    In a pot, add some vegetable oil, onion for flavor. Pour in your basmati rice and stir till light golden brown. Add chicken stock water to boil the rice till soft. Garnish with bell peppers, carrot and spring onions.

    Serve with sauce and enjoy.
