A delightful and crispy potato salad mixed with a garlic-infused mayo and fresh herbs, served with smokey grilled lemon halves.
Ingredients
4 Servings
- 1kgPotatoes
- 350mLMayonnaise
- 2cloveGarlic
- 1/4pieceGreen pepper
- 6pieceBaby spring onions
- 1handful Parsley
- 300mLOil
- 2pieceLemons
- 1dashSalt
- 1dashPepper
How to make Crispy Potato Salad with Garlic Mayo and Fresh Herbs served with Smokey Lemon
Boil the potatoes with the skin on and cut them into blocks.
Add oil to your pan and heat it up.
Fry the potatoes until golden brown. Add salt and pepper to taste, and drizzle with lemon juice.
Mix the finely chopped garlic into the mayonnaise.
Chop the green pepper, baby spring onions, and parsley.
Cut the lemons in half.
Tips & Tricks
Use a paper towel to drain the potatoes.
In another pan, grill the lemon halves.
