Ingredients
A few leaves from a lemon tree
1 lemon, sliced
1 lemongrass stalk, bruised
A handful of fresh mint
A handful of fresh parsley
A thumb of fresh ginger, sliced
Optional: 1 teaspoon of honey per serving
Instructions
Place the lemon tree leaves, sliced lemon, bruised lemongrass, mint, parsley, and ginger into a medium-sized pot.
Cover the ingredients with water.
Bring the pot to a slow simmer over medium-low heat. Let it simmer for at least 30 minutes, or until the liquid turns a pale green. You’ll know it's ready by the rich, fragrant aroma.
Carefully strain the mixture through a sieve into a teacup.
Sweeten to taste with a teaspoon of honey.
