A traditional and flavorful soup made with okra, palm oil, and a variety of proteins including beef, snails, and dried fish.
Ingredients
- 2cupsokra (chopped or grated)
- 1/2cuppalm oil
- 2piecefresh yellow pepper
- 1lbbeef or chicken
- 1cupdried prawns
- 4piecesnails
- 1cupdried fish (malgala or dried catfish)
- 1bundlevegetable (ugu)
- 2cube seasoning (Maggi)
- 1dashsalt
How to make Okra Soup
Wash the beef, dried prawns, dried fish, and snails thoroughly and set aside.
Put the beef in a pot, add water, seasoning, and salt. Cook for 5 minutes.
Add the dried prawns, dried fish, and snails to the pot.
Add 2 cups of water.
Add the palm oil and cover to boil for 3 minutes.
Add the chopped or grated okra and ground pepper.
Stir gently and allow to cook for 3 minutes without covering the pot.
Add the vegetables, additional seasoning, and stir.
Cook for 2 minutes.
Add salt to taste and cook for 1 more minute.
Serve with your preferred swallow.
Tips & Tricks
Ensure to wash all proteins thoroughly to remove any dirt or sand.
Do not cover the pot after adding the okra to retain its texture.
