How to make Girandole with Vegetables & Cheese

  1. Step 1

    Cube all the vegetables. Then boil carrots until soft. Drain and set aside.

  2. Step 2

    Boil pasta and save some of the pasta water.

  3. Step 3

    In a pan add cooking olive oil, onion, garlic, cauliflower, and cooked carrots. Add pasta water and leave to simmer until water dissolves.

  4. Step 4

    Add the leek, green bell peppers, olives, and sauté for 8 minutes. Then add cooked pasta.

  5. Step 5

    When ready, add more olive oil, shaved cheese, parsley, basil, and more cracked black pepper. Enjoy.
