Delicious Nigerian Puff Puff

Ingredients
- 2 1/2cupsflour
- 4tbspsugar
- 1tspsalt
- 2 1/2tspactive dry yeast
- 1/8tspnutmeg/cinnamon
- warm water
- oil for frying
How to make Delicious Nigerian Puff Puff
Pour the flour, sugar, yeast, salt, and cinnamon/nutmeg into a clean bowl.
Combine together properly with a wooden spatula or your hand.
Add the warm water in bits and mix until you achieve the right consistency (not too thick, not too thin).
Cover with a clean cloth or cling film and leave to rise in a warm place for 35-45 minutes or until it doubles in size.
Heat up oil in a pan (the oil should be very deep).
Scoop the batter with your hand or a spoon into the hot oil.
Keep turning the puff puff so that all sides get cooked properly. Fry until all sides are brown.
Scoop out of the oil and transfer to a basket lined with baking paper to strain out excess oil.
Your delicious puff puff is ready.
Tips & Tricks
Ensure the oil is hot enough before frying to avoid the puff puff absorbing too much oil.
You can use a spoon to scoop the batter if you prefer uniform sizes.
Mix the batter till it becomes a bit stretchy so the puff puff will be fluffy.
If you're using active dry yeast and you're not sure whether it's active make sure to check by mixing it in a bowl with warm water then cover it and leave in a warm place for about 10 mins. If it's foamy, then you can use it, if it isn't, then the yeast is probably dead.
You can put some chopped pepper in it if you want it spicy, you can also use powdered pepper.
If you're using your hand to scoop it, oil them first so the batter doesn't stick.
Check the oil before frying with a little piece of batter, if it takes 3-5 secs to bounce back up, the oil is hot enough.
Make sure the oil is deep enough or else the puff puff won't rise.
Make sure not to scoop too much batter because it's going to rise in the oil.
