A flavorful and crispy potato dish seasoned with Himalayan spices and herbs.


2 Servings
(1 serving = 1 portion)
  • 2tbsp
  • 2tbsp
    finely chopped garlic
  • 1tbsp
    Jimboo (dry chives)
  • 2tbsp
    chopped green coriander
  • 2tbsp
    chopped spring onion
  • 1/2kg
    medium potatoes, halved and crispy fried after boiling
  • 1tsp
    chat masala (optional)
  • 1tbsp
    medium spice chili flakes
  • salt to taste
  • 1tsp
    timoor powder (Sichuan pepper powder)


  1. Boil the medium potatoes with bay leaf, coriander seed, and salt.

  2. After cooking, cut the potatoes in half and fry them in oil until crispy.

  3. Let the fried potatoes rest in the refrigerator for 12 hours for extra crispiness.

  4. After resting, fry the potatoes again in oil over medium heat.

  5. Heat a frying pan with ghee, add garlic, and fry until golden brown.

  6. Add Jimboo, chopped coriander, and chopped spring onion. Sauté until lightly crispy.

  7. Add the potatoes and the mentioned spices. Toss for a few minutes and serve.

Tips & Tricks

  1. Resting the fried potatoes in the refrigerator helps to make them extra crispy.

  2. Adjust the amount of chili flakes and Sichuan pepper powder according to your spice preference.
