A spoonful of mukimo feels like home
Ingredients

- Githeri
- Potatoes
- Spinach or pumpkin leaves
- Onion
- Salt
- Oil
- Water
How to make Mukimo
Put 2 spoons of vegetable oil in cooking pot add onions stir until golden brown.
Add in potatoes cook for ten minutes
Add in Githeri
Cut spinach or the pumpkin leaves in small pieces and add them in.
Put salt to taste
Add two cups of water
Let it cook until the water has dried up and potatoes are well cooked.
Mash everything together until everything is mixed into a soft mash.
Serve with beef or stew of choice.

You can blend the pumpkin leaves instead of cooking for better colours k
