A flavorful and aromatic Mutton Tikka Biryani made with marinated mutton, spices, and basmati rice.
Ingredients
- 1cuphung yogurt
- 1 1/2tbspraw papaya paste
- 1 1/2tbspginger garlic paste
- 2tbspfried and crushed onion
- 2 1/2tbsptikka masala
- 1/2kgboneless mutton cubes
- 4tbspcooking oil
- 1piecemedium onion, chopped
- 2tbspraisins
- 1cupcarrot, julienned
- 1/2tspcumin powder
- 1/2tspfennel seeds powder
- 1tspsalt
- 1/4tspgaram masala powder
- 2piecestock cubes
- 2cupssoaked rice
- 3cupswater
- 1tspcooking oil
- 1pieceonion rings
- 1piecetomato, julienned
- 1piececapsicum, julienned
- 1piececharcoal for smoke
How to make Mutton BBQ Rice
In a bowl, add yogurt, raw papaya paste, ginger garlic paste, fried onion, and tikka masala. Whisk well.
Add boneless mutton cubes and mix well. Cover and marinate for 2 hours.
In a pot, add cooking oil and onion. Fry until translucent.
Add raisins and mix.
Add carrots and mix well.
Add cumin powder, fennel seeds powder, salt, garam masala powder, and stock cubes. Mix well.
Add rice and mix well.
Add water, mix, and bring to a boil. Cover and cook on low flame for 15-20 minutes. Set aside.
In a frying pan, add cooking oil and marinated mutton. Mix well, cover, and cook on low flame for 25-30 minutes or until meat is tender. Then cook on high flame until oil separates.
Give a charcoal smoke for 2-3 minutes, then take out in a bowl.
In the same frying pan, add cooking oil, onion rings, tomato, and capsicum. Stir fry for 1-2 minutes.
In a serving dish, add cooked rice, stir-fried vegetables, and cooked mutton. Serve!
Tips & Tricks
Ensure the mutton is marinated for at least 2 hours for better flavor.
Giving the mutton a charcoal smoke enhances the aroma and taste.
