Spicy Chicken Meatballs in Spicy Chimichurri

Ingredients
Meatballs
- 1lbground chicken
- 1cupmozzarella cheese, shredded
- 2clovegarlic, minced
- 1piecejalapeno, finely chopped
- 1cupparmesan cheese, grated
- 2pieceeggs
- 1tsponion powder
- 1tspchili flakes
Chimichurri Sauce
- 1cupfresh parsley, chopped
- 1cupfresh cilantro, chopped
- 2clovegarlic, minced
- 1piecejalapeno, finely chopped
- 1tspred pepper flakes
- 1cupolive oil
- 2tbspred wine vinegar
- 1tspsalt
- 1tspblack pepper
How to make Spicy Chicken Meatballs in Spicy Chimichurri
Prepare the Meatballs
In a large bowl, combine ground chicken, mozzarella, minced garlic, chopped jalapeno, grated parmesan, eggs, onion powder, and chili flakes.
Mix until all ingredients are well combined.
Shape the mixture into small meatballs.
Cook the Meatballs
Preheat the oven to 400°F (200°C).
Place the meatballs on a baking sheet lined with parchment paper.
Bake for 20-25 minutes or until cooked through and golden brown.
Prepare the Chimichurri Sauce
In a food processor, combine parsley, cilantro, minced garlic, chopped jalapeno, red pepper flakes, olive oil, red wine vinegar, salt, and black pepper.
Pulse until the mixture is well blended but still slightly chunky.
Serve
Serve the meatballs hot with the chimichurri sauce drizzled on top or on the side for dipping.
Tips & Tricks
For extra flavor, let the chimichurri sauce sit for a few hours before serving.
Adjust the level of spiciness by adding more or less jalapeno and chili flakes.
