Ingredients

  • 8oz
    fettuccine pasta
  • 2tbsp
    olive oil
  • 4piece
    bacon, chopped
  • 1cup
    frozen peas
  • 2cups
    fresh spinach
  • 3clove
    garlic, minced
  • 1/2cup
    grated Parmesan cheese
  • 2piece
    large eggs
  • Salt and pepper to taste

How to make Easy Pea & Spinach Carbonara

  1. Cook the fettuccine pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy.

  3. Add the peas and spinach to the skillet and cook until the spinach is wilted.

  4. Add the minced garlic and cook for another minute.

  5. In a small bowl, whisk together the Parmesan cheese and eggs.

  6. Add the cooked pasta to the skillet and toss to combine with the bacon and vegetables.

  7. Remove the skillet from heat and quickly stir in the egg and cheese mixture, tossing the pasta constantly to prevent the eggs from scrambling.

  8. Season with salt and pepper to taste.
