Ingredients
- 1lbground beef
- 1pieceonion, diced
- 2clovegarlic, minced
- 1candiced tomatoes
- 1cantomato sauce
- 4cupsbeef broth
- 1tspdried basil
- 1tspdried oregano
- 1/2tspsalt
- 1/4tsppepper
- 1/2cupricotta cheese
- 1/2cupshredded mozzarella cheese
- 1/4cupgrated Parmesan cheese
- 2cupscooked pasta (such as rotini or penne)
How to make Easy Lasagna Soup
In a large pot, cook the ground beef over medium heat until browned.
Add the onion and garlic, and cook until softened.
Stir in the diced tomatoes, tomato sauce, beef broth, basil, oregano, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 20 minutes.
In a small bowl, mix together the ricotta, mozzarella, and Parmesan cheeses.
To serve, ladle the soup into bowls and top with a spoonful of the cheese mixture and some cooked pasta.
Tips & Tricks
For a spicier version, add a pinch of red pepper flakes to the soup.
You can substitute ground turkey for a leaner option.
