- 2tbspvegetable oil
- 1pieceonion, diced
- 1piecered bell pepper, diced
- 2clovegarlic, minced
- 150gfrozen peas
- 1/2tbspsesame oil
- 2pieceeggs
- 1 1/2tbspdark soy sauce
- 1/4tspsalt
- 1tspfresh lemon juice
- 2sprigspring onions, chopped
How to make Cauliflower Egg Fried Rice
Preparing the Cauliflower
Grate the cauliflower using a grater or a food processor.
Cooking the Vegetables
Heat vegetable oil in a large wok over medium heat.
Add diced onion and cook, stirring regularly, for five minutes until the onion is soft and translucent.
Add diced red bell pepper, minced garlic, and frozen peas. Cook for a further two minutes, stirring regularly.
Cooking the Cauliflower Rice
Add sesame oil and grated cauliflower to the wok and turn the heat up to high.
Stir everything together to prevent the cauliflower from sticking to the bottom of the wok.
Once the cauliflower rice is hot, push it to the side of the wok.
Cooking the Eggs
Crack two eggs into the space in the wok and add a splash of dark soy sauce.
Cook the eggs until they start to scramble, then mix them into the cauliflower rice.
Final Touches
Add the remaining dark soy sauce, salt, and lemon juice. Mix everything together.
Serve the rice on plates and top with chopped spring onions.
Tips & Tricks
You can save time by using pre-grated cauliflower available in supermarkets.
Ensure the wok is hot enough to scramble the eggs quickly.
