A hearty and comforting beef stew with tender meat and vegetables.
Ingredients
- 1lbbeef stew meat, cubed
- 1pieceonion, diced
- 2piececarrots, peeled and sliced
- 2piececelery stalks, sliced
- 3piecepotatoes, peeled and cubed
- 4cupsbeef broth
- 1candiced tomatoes
- 2clovegarlic, minced
- 1tspdried thyme
- 1tspdried rosemary
- 2tbspolive oil
- Salt and pepper to taste
How to make Beef Stew
In a large pot, heat olive oil over medium heat. Add beef stew meat and brown on all sides.
Add onion, carrots, and celery to the pot and sauté until vegetables are softened.
Stir in garlic, thyme, and rosemary, and cook for another minute.
Add beef broth, diced tomatoes, and potatoes to the pot. Bring to a boil, then reduce heat to low and simmer for 1-2 hours, or until beef is tender.
Season with salt and pepper to taste before serving.
Tips & Tricks
For a thicker stew, you can mash some of the potatoes against the side of the pot.
Adjust the seasoning to your preference by adding more herbs or spices.
