A flavorful and spicy dish featuring fried eggs cooked in a salsa made with onions, tomatoes, green chilies, and spinach.


5 Servings
(1 serving = 1 egg with salsa)
  • 1piece
    onion, thinly chopped
  • 1 1/2piece
    green chilies, thinly chopped
  • 1piece
    tomato, thinly chopped
  • 1
    handful spinach, chopped
  • 1piece
    green onion, chopped
  • 1tsp
    salt, to taste
  • 1tsp
  • 1tbsp
    red chili powder
  • 5piece
  • 2tbsp
    cooking oil


  1. Heat oil in a frying pan.

  2. Add onion and fry until light golden brown.

  3. Add tomato, green chilies, green onions, and spinach. Mix well.

  4. Add salt, turmeric, and red chili powder. Fry for 2-3 minutes.

  5. Make 5 wells in the mixture and add the eggs.

  6. Sprinkle black pepper and cover the pan. Let it cook on steam for 5-6 minutes until eggs are done.

  7. Garnish with coriander leaves before serving.

Tips & Tricks

  1. Ensure the oil is hot before adding the onions to achieve a golden brown color.

  2. Covering the pan helps the eggs cook evenly with steam.
